Freezer Food Challenge: Fruity Chicken & Pumpkin Curry

One of my favourite parts of the Freezer Food Challenge is finding creative ways to reinvent leftovers. Earlier in the week, we enjoyed a comforting slow cooker chicken and pumpkin stew — warming, filling, and perfect for busy days.
But instead of reheating it as-is, I wanted to mix things up. The result? A beautifully fruity, gently spiced chicken and pumpkin curry made with just a few store-cupboard staples.
With the simple addition of curry powder, sultanas, chopped apple, and a splash of boiling water, the stew transformed into something completely new.
Served with wholegrain rice (a gluten-free staple in our kitchen), it became a totally different meal — and one that definitely kept the kids happy. The boys are spice fans, so this went down very well!
Ingredients
3–4 cups leftover chicken and pumpkin stew
1–2 teaspoons curry powder (adjust to taste)
1 small apple, peeled and finely chopped
2 tablespoons sultanas
100–150ml boiling water (as needed)
1 cup wholegrain rice (dry weight), to serve
Method
Heat the Base Add the leftover chicken and pumpkin stew to a large saucepan over medium heat.
Add the Flavour Boosters Stir in the curry powder, chopped apple, and sultanas until evenly combined.
Adjust Consistency Add a little boiling water to loosen the mixture if needed, creating a more curry-like sauce.
Simmer Gently Cook for 8–10 minutes, stirring occasionally, until heated through. The apple will soften slightly, and the sultanas will plump up beautifully.
Cook the Rice Meanwhile, prepare the wholegrain rice according to packet instructions.
Serve Spoon the fruity chicken and pumpkin curry over the rice and serve hot.
Tips & Variations
Add a splash of coconut milk for a creamier finish.
Stir in a handful of spinach at the end for extra greens.
Like it hotter? Add chilli flakes or fresh chilli.
This works brilliantly with brown basmati or quinoa too.
