Last-Minute Magic: A Weekend Escape to Copenhagen

Sometimes you just get that feeling—you need to go somewhere. No overthinking, no overplanning… just go.
Craig was heading off to Norway, and I already had a few days in Scotland lined up with the boys for Albie’s (slightly belated) birthday treat. But in between it all, I got itchy feet. Copenhagen had always been on my list, but Craig had never really been fussed about it.
So I thought—perfect. My chance to go solo.
Well… almost solo.
I casually mentioned it to my friend Sophie, and without hesitation she said, “Can I come?” Of course! And just like that, it turned into the perfect girls’ trip. Despite speaking daily, we live miles apart and hadn’t actually seen each other since her wedding the year before—so this felt long overdue.
Easy Travel & A Perfect Start
We booked Ryanair flights from Stansted to Copenhagen, which worked perfectly as Sophie lives nearby. I headed up the day before, stayed at hers, and we made our way to the airport the next day nice and relaxed—no stress, just excitement.
We flew out on Thursday evening for a three-night stay, returning Sunday—ideal for a quick but meaningful escape.
A Hotel That Stole the Show
Finding the right hotel was important. I didn’t want anything bland or “beige,” and luckily Sophie was completely on the same page.
We found Bryggen Guldsmeden Copenhagen—and it was perfect. The décor had this almost Indonesian-inspired feel, warm woods, earthy tones, and unique details everywhere.
It instantly felt like somewhere special. Even better, it had a pool and spa—exactly what we wanted after long days exploring.
Arriving in the dark, we grabbed a taxi from the airport (having already eaten at Stansted, thankfully), so we could just check in and unwind.
Walking into reception, we were immediately struck by the design—especially a stunning multicoloured glass fish light hanging in the entrance. It set the tone straight away.


On the way to our room, we noticed a shared coffee and snack station on each floor—such a lovely touch. Fresh coffee, juices, water, and a little seating area—it felt thoughtful and different.
Our room didn’t disappoint either. Twin four-poster beds, lots of natural wood, and an eco-conscious bathroom stocked with sustainable toiletries, robes, flip flops, and slippers. It felt luxurious but grounded—and we both agreed our other halves would’ve been seriously jealous.
Exploring Copenhagen (With No Real Plan)
The next morning, despite staying up chatting far later than planned, we were both up early and ready for breakfast—which was incredible.
A beautifully designed restaurant, packed with options: fresh fruit, fish, hot and cold dishes, and loads of gluten-free choices. Great coffee too, which was essential as we knew we’d be walking all day.
And walk we did.
Copenhagen is one of those cities where water is never far away. We wandered with no strict itinerary, just ticking off a few must-sees along the way—the Little Mermaid statue, Nyhavn harbour, Tivoli Gardens, and the many stunning palaces scattered across the city.
We did get a bit lost at times—but honestly, that was part of the charm. Colourful buildings, canals, hidden corners—you stumble across beauty everywhere.
The weather was kind to us too. Cold, yes—but bright blue skies and sunshine made it perfect for exploring.
We definitely made the most of our couple of days in this amazing island-based city, spread across Zealand and Amager islands—each step revealing something new, from harbourside views to quiet, tucked-away streets.
Aperol, Harbourside Views & Firsts
What started as a simple coffee stop turned into something a bit more… Sophie convinced me to try my first Aperol Spritz while we sat by the water people-watching.
Safe to say—it won’t be my last.
We also loved watching the cold-water swimmers and sauna culture along the harbour. It’s such a big part of life there, and something I really appreciated given my love of hot and cold therapy and being in the water myself whenever I get a chance.
Spa Evenings & Simple Pleasures
After a full day of walking, we headed back to the hotel late afternoon—perfect timing for the spa.
Swimming, sauna, steam room, and even clay face masks—it was exactly what we needed.
For me, there’s no better way to end a day than a swim and sauna, and this didn’t disappoint.
After freshening up, we relaxed with tea, juice, and snacks from the hotel’s Trust Bar before heading out for dinner.
Food Highlights
That evening, we took a recommendation from reception and visited a small Italian restaurant nearby. Gluten-free pizza topped with smoked fish and (of course) another Aperol Spritz made for a perfect, relaxed end to the day.
On our final evening, we stayed in and ate at the hotel’s restaurant, Sole Factory—and it was incredible. Naturally, I went for fish, and it was one of the standout meals of the trip.
Day Two: More Exploring, More Magic
Another early start (not unusual for me), another amazing breakfast, and then straight back out exploring—this time heading towards the Little Mermaid and the port.
We watched seaplanes take off and land, boats drift through the harbour, and spent time just soaking it all in.
We even dipped into a shopping centre briefly, though shopping wasn’t really the focus of this trip. It was more about experience, movement, and connection.
And, of course, more spa time when we got back.
Final Thoughts
Copenhagen completely exceeded expectations. It’s a city that feels calm yet vibrant, full of beauty without trying too hard.
This last-minute trip turned into something really special—amazing surroundings, great food, and the best company.
Whether you go solo, with a partner, friends, or family, it’s the perfect destination for a few days away. We explored entirely on foot, but there are plenty of other options too—bike hire, guided tours, or hop-on-hop-off buses if that’s more your style.
For us, it was simple: walk, talk, explore, eat, relax… repeat.
And honestly? I’d do it all again in a heartbeat.
